THAI RARE BEEF WITH RED ONION AND KAFFIR LIME RECIPE

 

YEILDS FOUR

 

FOR THE SAUCE:

 

1 cup                      Lime juice (freshly squeezed)

1/3 cup                   Palm sugar (grated)

1 ½ Tbsp.                Nampla (thai fish sauce)

 

FOR THE BEEF AND MARINADE:

 

1 lb                          Beef top sirloin (fat removed)

½ cup                     Light soy

¼ cup                     Cilantro (chopped)

 

FOR THE SALAD:

 

1 each                     Large Red onion (shaved thin)

1/4 cup                   Scallions (bias cut ½ inch)

¼ cup                     Cilantro Leaves

3 each                     Kaffir lime leaves (chiffanade)

 

PROCEDURE:

 

1.                    In a small pot place lime, sugar and fish sauce, heat until sugar melts, chill

2.                    In a container marinate meat with soy and the cilantro stems for 1 to 2 hours

3.                    In a saute pan heat a small amount of oil and sear the top sirloin on both sides

4.                    Remove from pan and slice thin place in bowl. Discard marinade

5.                    In a large mixing bowl place sauce meat and all salad ingredients , toss and serve
