LAMB MEATBALLS WITH CUCUMBER YOGURT AND SMOKED TOMATO

YEILDS EIGHT

 

FOR THE MEAT BALLS

 

2 lb                        Ground Lamb meat

1 Tbsp                    Mint (chopped)

½ cup                    Shallots (minced)

¼ cup                    Garlic (minced)

1 ½ cups                Heavy cream

3 each                    Large eggs

1 cup                      Progresso bread crumbs

1 Tbsp                    Kosher salt

½ Tbsp                  Black pepper

 

FOR THE CUCUMBER YOGURT:

 

1 ½ cup                  Greek Yogurt

¾ cup                     Grated cucumber (squeezed of excess juice)

2 tsp                       Finely chopped garlic

1 tsp                       Kosher Salt

½ tsp                      Black pepper

 

FOR THE SMOKED TOMATO:

 

1 each                     Tomato (large) quartered

½ tsp                      Salt

pinch                      Black pepper

 

 

PROCEDURE:

 

1.                    In a stainless steel bowl place all ingredients in the bowl, mix well and roll  into any desired size

2.                    Place on a sheet tray and bake at 350 degrees until done, reserve

3.                    In a small bowl mix yogurt, cucumber, garlic, salt and pepper, reserve

4.                    In a stove top smoker place soaked wood chips and place on stove, place tomato quarters on top of a rack.

5.                    Smoke in stove top smoker for 20 minutes, transfer to a blender and puree until smooth

6.                    Season with salt and pepper, reserve
