No Bake Cream Cheese Tart with Thin Mint Crust

Yield 10 Servings

Equipment: Food Processor, 9"x1 1/2"Fluted Tart Pan

No Bake Cream Cheese Tart with Thin Mint Crust

 

1 Box Thin Mints

4T.  Butter

1# Cream Cheese

1C.  Sugar

8T.  Butter (Soft)

6T.  Sour Cream

1T.  Vanilla Extract

 

Procedure:

Puree the Thin Mints in the food processor. (2-3Min.) Add the soft butter and mix in until the crust holds its shape. Press into the bottom of the tart pan.  Refrigerate.  In a clean food processor bowl combine the cream cheese, sugar and butter.  Pulse until combined. (2-3Min.) Place the sour cream and vanilla extract into the food processor mixture; pulse until smooth.  Spread on top of the cookie crust and refrigerate for 2 hours.  Tart is now ready to cut and serve.

 

 

Optional Garnishes:

 

The tart can be garnished with Thin Mints, Berries, Fruit or Nuts.

 

Comments:

 

This is a easy do ahead type of dessert and can look elegant with a little garnishment.
